Levante announced on Sunday that Caparros would be taking over for Juan Ignacio Martinez, who was not offered a contract extension.
The 57-year-old Caparros has coached several Spanish clubs, including Athletic Bilbao, Deportivo La Coruna and Sevilla.
Most recently, he was fired by Mallorca midway through last season.
Under Martinez, Levante played in the Europa League, having qualified for European competition for the first time last season, but their campaign ended with an ongoing investigation into alleged match-fixing in a loss to Deportivo. Martinez has not been linked to any wrongdoing.
